• How to protect your knives

    Knives are expensive, and the super-sharp ceramic ones even more so, so one must look after them and protect the sharp edges. A ceramic knife is especially vulnerable because the edge, though extremely sharp, is brittle and easily damaged.

    To protect your knives, nip down to your local stationery store, buy a packet of so-called slide binders and slide them over the knives’ sharp edge – they go on very easily if one end of the binder is partially cut away to ease the process. If necessary, you can cut the binders (a small hacksaw will do the job) to the right length.
